I love pasta with a tomato sauce. The recipe I use for my tomato sauce has only 6 ingredients in it and it takes minutes to make. I use this sauce whenever we have spaghetti and meatballs but it can be used for any pasta dish.
1 clove of garlic, crushed
1 onion, chopped
1 can of chopped tomatoes
1 teaspoon of sugar
1 teaspoon of basil
Salt and pepper to taste
Let's cook
Fry your onion in some olive oil on a low heat for a few minutes and then add in your crushed garlic. Fry for a further minute and then add in your chopped tomatoes. Stir in 1 teaspoon of sugar, to cut the acidity of the tomatoes and season with salt and pepper to your own tastes. Add in 1 teaspoon of basil (fresh or dried) and let it cook gently for 5 minutes.
You can also batch cook this sauce and freeze it to use as and when you need it. Just remember to add 1 teaspoon of sugar to each tin of tomatoes you use, so if you use 3 cans then use 3 teaspoons of sugar.
